Vegetable oil, for frying
about 12 pork ribs
100g/3½oz marmalade
6 tbsp water
4 spring onions, finely sliced
2.5cm/1in piece fresh ginger, finely sliced
salt and freshly ground black
pepper
sesame seeds, for sprinkling
Heat the oil in a pan and fry the ribs until golden-brown on
all sides.
Add the marmalade to the pan.
When it begins to melt, add the water and shake the pan
well.
Cook for 7-8 minutes over a medium heat, stirring
occasionally, until the marmalade mixture is reduced and sticky.
Add the sliced spring onions and ginger and stir well to
combine.
Season, to taste, with salt and freshly
ground black pepper.
To serve, place the ribs onto a serv
